Thick, chewy and insanely delicious pecan cookies! Made with brown butter, brown sugar, and lots of toasted pecan butter, these cookies are absolutely delicious. A must-have cookie recipe for the holidays!
Do you follow me on Instagram? If so, you may have seen me make this recipe on Instastories last week. I posted some pictures of these cookies when they came out of the oven and within a few hours I had over 100 requests for the recipe! So, while I didn’t plan to publish it until the fall, I decided to mix up my editorial calendar and share it with you guys today.
Because I like to give you what you want! And according to my inbox…you really want those Pecan Butter Cookies!
*ingredients
1 cup chopped pecans
°7 tbsp. Butter without salt
°1/3 cup granulated sugar
°1 cup brown sugar
°2 eggs
°1 tablespoon of pure vanilla extract
°2 cups of all-purpose flour
°1/2 teaspoon of baking soda
°a pinch of salt
Place pecan halves on top of each cookie

Make sure your oven is preheated to 350°C and line 2 with parchment paper.
Next, beat the butter, granulated sugar, and brown sugar with an electric mixer. The mixture is slightly creamy.
Then add the eggs and vanilla extract and beat again for another 2 minutes. Immediately add the flour, baking soda, and salt and stir until well combined.
When finished, place the balls, using a medium spatula, on the prepared parchment paper, then place half a pecan on top of each cookie. Bake until golden brown, about 10 to 15 minutes.
