Ingredients

  • 6 cups carrots, grated 
  • 1 cup brown sugar 
  • 1 cup raisins 
  • 4 eggs 
  • 1 ½ cups sugar 
  • 1 cup vegetable oil 
  • 2 teaspoons vanilla 
  • 1 cup crushed pineapple 
  • 3 cups flour 
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt 
  • 4 teaspoons cinnamon 
  • 1 cup walnuts, chopped 
  • Cream cheese frosting

Instructions

FIRST STEP:

In a large bowl combine carrots and brown sugar, stir and let sit for 1 hour then add raisins

SECOND STEP:

Preheat oven to 350 degrees and prepare 2 round cake pans 

Beat eggs then add sugar, oil, and vanilla

THIRD STEP:

Stir in pineapple 

Combine dry ingredients then stir in wet ingredients

FOURTH STEP:

Add carrot mixture

FIFTH STEP:

Pour into pans and bake 45-50 minutes until toothpick in center comes out clean

SIXTH STEP:

Cool, frost, and serve
