Ingredients
- 2 lbs steak, cut into ½ inch strips
- 1 each red, green, and yellow bell peppers – cut into thin strips
- 1 onion, cut into thin strips
- Olive oil
- Tortillas, warmed
- Marinade:
- 4 tablespoons olive oil
- 1 tablespoon lime juice
- ½ teaspoon chili powder
- ½ teaspoon cumin
- ½ each of salt & pepper
- 1 tablespoon garlic, minced
Instructions
FIRST STEP:
In a small bowl whisk together marinade ingredients until well combined
Set ⅓ of the mixture aside, place ⅓ in a ziplock bag, and ⅓ in a separate ziplock bag
SECOND STEP:
Place sliced veggies in one bag and steak strips in the other bag – marinate for at least one hour
In a skillet over medium heat cook marinated veggies in oil until soft – remove from skillet, set aside
THIRD STEP:
In the same skillet, add more oil and cook steak until just done
Add veggies back in the skillet and toss to combine
FOURTH STEP:
Serve with warm tortillas
