ingredients:

All purpose seasoning, recipe posted with my homemade seasonings, but will repost:

2 T. smoked paprika
1 T. brown sugar
1 T. salt
1 T. Adobo
1 tsp. black pepper

3 to 5 pound beef pot roast
All purpose seasoning (make 2 batches and put in an air tight container)
3-4 large russet potatoes
1 large onion
3 large carrots
2 stalks celery
honestly, any other root veggie you may want to add

Directions:

Place meat in a large storage container and season each side really good with the all purpose seasoning. Cover and place in fridge overnight or a minimum of 12 hours. Remove meat from fridge, clean and cut up the veggies and place them in the bottom of a roasting pan that has a lid. Season the veggies with more of the seasoning mix, about 2 T. Place the meat over the veggies and pour the juice that was in the bottom of the container over everything. Put the lid on and bake at 325 degrees for 4 hours. Turn the oven off and let the meat rest for 30 minutes to an hour before removing from the oven.
