Any easy pancake you mix in the blender! A whole slice of lemon is mixed with butter, sugar and eggs to create a custard like pie full of lemon flavor. Add sweet whipped cream to it!

I love the blender recipe. I’m sure for generality of you cleaning up is the defeat part about baking&cooking. It’s amazing how many dishes you can eat from one meal. I’m over it. I was scrolling down my Pinterest feed and found this recipe. The name caught my attention. Arizona Sunshine Lemon Pie?! Since my blog is called Baked in ARIZONA, I had to give it a try (and I’m obsessed with lemons!) and then when I read that you use whole lemons, peel and everything, I was pretty intrigued. The best part is that this pie is super easy (I used a frozen pie crust) but if you want to make a quick pie crust, it’s still super easy. Just throw everything into a blender, mix it up, and pour it into the peel. 40 minutes later you have lemon, custard like pie! We liked this best chilled with a little sweetened whipped cream on top.   • Ingredients :

+For pie
° 1 whole lemon, washed and de-seeded (fresh from the tree and in the best season)
° 4 large eggs
° 1/2 cup melted (salted) butter
° 1 teaspoon vanilla (I use this)
° 1 1/2 cups sugar
° 1 piece (9″) unbaked (I’m using a deep frozen dish)

° 1 cup whipping cream
° 2 tablespoons of sugar

  • Instructions :

Take the pie crust out of the freezer or make your own. I utulzie a frozen deep plate pie crust & it worke great. I putting it on a cookie sheet for support. If you are using a homemade pie crust in a glass dish, you don’t need to do this.

Preheaat oven 350 degrees.

Washing lemon very well, & chop it also removing all seeds. (No need to peel it, you’ll blend the whole lemon!) Soak it in your blender.

Add eggs, butter, vanilla and sugar. until a smooth mixture. I start at powder 5 and then go up to 10.

Pour the mixture into your pie. Bake for 40 minutes or until cooked through.

Let the pie cool, then cool in the refrigerator.

To top
Place bowl and paddle in freezer for 20 minutes (not mandatory). Pour the whipping cream and sugar. Whip until peaks form.

Cut the pie into slices and serve chilled with a little whipped cream on top. It can be enjoyed warm (it won’t be firm) or at room temperature but we prefer it cold.
