More tips for making baked potato salad
Allow the apple cider vinegar for at least 15 minutes to soak into the warm potatoes. The hotter the potato, the faster the vinegar will be absorbed. Don’t skip this step, it adds a nice touch to the salad.
Don’t want the whole house to smell like bacon? Cook your food in the oven instead. Once the potatoes have finished cooking, place the bacon on a lined baking sheet and cook at 400°F for 15 minutes or until desired crispness.

1 cup sour cream
1/2 cup mayonnaise
1 package cooked and crumbled bacon
1 small onion, chopped
Chives to taste
1 1/2 cups grated cheddar cheese

Wash the potatoes and cut them into small pieces. Cover with water and boil until fork tender, about 20-25 minutes. Drain the potatoes and let them cool. Once cool, mix mayonnaise and sour cream. Add onions, chives, and cheese. Salt and pepper to taste. Top with grated cheese and bacon and serve
