COCO-CHOCOLATE
DOUGH
Ingredients
80 grams of sugar
65 grams of flour
1 tsp baking powder
1 tsp vanilla sugar
40 grams of honey
100 grams of whole milk

Mix all the ingredients in order until you get a smooth paste.
Chill for one hour
GANACHE

Ingredients

2 tbsp fresh cream
50 grams of dark chocolate
75 grams of apricot jam

Gently heat the chocolate chips, cream and jam in 30 second steps. Mix well to have a smooth texture.
Fill a pocket with a small smooth nozzle.
Leave at room temperature.
COOKING

Ingredients

80 grams of butter
6 steps
Heat the oven to 180 degrees
Melt the butter in the microwave
Take the dough out of the fridge and add the cooled butter and mix the dough until it becomes homogeneous again.
Fill a piping bag and garnish the 9 saint honoré
With the pocket of ganache, push the nozzle into the small cakes and place a dab of ganache on them.
Take out the nozzle and draw a small spiral on top.
Bake for 20 minutes, let cool before unmolding
