Enchiladas rojas

Ingredients:

15 guajillo chiles
2 pasilla/ancho chile
Handful of chile de arbol
4 garlic cloves
Dash of salt
Tortillas
Queso fresco
Oil

Directions

Remove stem and seeds from chiles.
Boil all chiles and garlic together until chiles are soft.
Add to blender with some of the water you boiled them in.
Strain sauce.
Heat oil.
Dip tortilla in sauce.
Fry for a few seconds on each side.
Remove from oil. (Let oil drip off as much as possible.)
Add queso fresco and roll!
