*Ingredients for lasagna
°1 pound ground beef (15-20t)
°1 medium onion finely chopped
°2 large garlic cloves, minced
°1/4 cup dry red wine or beef broth
°1 tablespoon of olive oil
°24 ounces marinara sauce (3 cups)
°1/2 teaspoon sea salt
°1/4 tsp ground black pepper
°1/4 tsp dried thyme
°1/2 teaspoon granulated sugar
°2 tablespoons of finely chopped parsley
°9 cooked lasagna noodles
+Cheese sauce ingredients:
°16 ounces of low-fat cottage cheese
°15 ounces low-fat ricotta cheese
°1 large egg
°2 tablespoons finely chopped parsley, plus more for garnish
°4 cups grated and divided mozzarella cheese
*How to make the meat sauce:
Place a deep skillet or Dutch oven over medium/high heat and add 1 tablespoon olive oil, 1 pound ground beef, and diced onion. Saute the beef for 5 minutes or until the beef is no longer pink. Add the pressed garlic and sauté for another minute, until fragrant.
Add 1/4 cup of the wine and stir for 2 minutes or until the wine is almost evaporated. Add 3 cups marinara, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon thyme, 1/2 teaspoon sugar, and 2 tablespoons parsley. Bring to a simmer, then cover and cook for 5 minutes.
How to make cheese sauce:
In a large bowl, mix 16 ounces cream cheese, 15 ounces ricotta, 1 cup mozzarella, 1 egg and 2 tablespoons parsley. Mix well.
How to make lasagna:
Preheat the oven to 375 degrees Fahrenheit. Bring pot of water boil. Adding salt & 9 lasagna noodles. Cooking until done, according to instructions on the pack
Spread 1/2 cup of the meat sauce in the bottom of a deep 9″ x 13″ casserole dish. Add 3 noodles, spread over 1/3 of the meat sauce, and sprinkle with 1 cup of mozzarella. Pour the mixture on top with half of the cheese sauce.
Repeat to you have 3 layer noodles:
Add 3 noodles, 1/3 meat sauce, 1 cup mozzarella cheese, and 1/2 cheese sauce.
Add 3 noodles, 1/3 of the remaining meat sauce, and the remaining 1 cup mozzarella.
Poke 9-12 toothpicks on the surface of the lasagna (to keep the foil from sticking to the cheese). Covering with foil and bake at 375°F for 45 mn.
Remove foil and grill for 3 to 5 minutes, or until cheese turns golden. Let the lasagna rest 30 minutes before slicing
