Ingredients

  • 4-6 large potatoes
  • 1 cup bacon (cooked) 
  • 4 tablespoons butter 
  • ½ onion, chopped 
  • 2 teaspoons garlic, minced 
  • ¼ cup flour 
  • 2 ½ cups milk 
  • 2 ½ cups chicken broth 
  • 1 cup cheddar cheese, shredded 
  • ¾ cup sour cream 
  • Salt & pepper to taste
  • Green onions and additional cheese for garnish

Instructions

FIRST STEP:

Peel & cut potatoes into cubes, boil and drain, set aside 

In a large pot cook bacon until brown, remove from pot but leave the grease

SECOND STEP:

Cook onion in bacon fat and butter until soft

Add in garlic, cook 1 minute 

THIRD STEP:

Whisk in flour then slowly add in broth and milk 

Stir in cooked potatoes, sour cream, cheese, and ½ the cooked bacon 

FOURTH STEP:

Bring to a boil then remove from heat 

Bowl, garnish with green onions-cheese-bacon, serve & enjoy!
