Enjoy Taco Tuesday in style with these hearty Mexican Taco Wraps. Filled with all of the essentials, like savory ground beef, juicy tomatoes, fluffy white rice, crunchy corn and melty cheese, they’re a delicious, Mexican-inspired feast!

 

Ingredients

  • 1 bag Success® White Rice
  • 1 tbsp canola oil
  • 1 lb ground beef
  • 1 can (11 oz) whole kernel corn with red and green bell peppers, drained
  • 1 can (10 oz) diced tomatoes and green chilies
  • 8 flour tortillas, warmed
  • 1 cup shredded Monterey Jack cheese with peppers

Instructions

  • Try these Mexican-inspired Taco Wraps for a weeknight dinner or your next gathering. Filled to perfection with all of your favorite, savory taco fillings, they’re a fiesta on a plate.

    Step 1

  • Prepare rice according to package directions.

  • Step 2

  • Heat oil in a large skillet over medium-high heat. Cook beef, breaking up with a wooden spoon, for 5-7 minutes, until browned. Drain fat and liquid, if necessary.

  • Step 3

  • Stir in rice, corn and tomatoes. Cover and cook for 5-10 minutes, or until no liquid remains.

  • Step 4

  • Spoon 3/4 cup of mixture into each tortilla. Top with cheese. Roll up and serve.

  • Recipe Tips

    Substitute cooked, shredded chicken for the beef called for in the recipe.

    Feel free to serve these wraps with lots of additional toppings. Try guacamole, salsa, sour cream and jalapeños. Sprinkle a little lime juice over the top for added zesty flavor.
