Oatmeal Pancakes Recipe
Ingredients:
- 1 cup all-purpose flour
- 1 cup rolled oats
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 1/4 cup melted butter or vegetable oil
- 1 teaspoon vanilla extract
- Additional butter or oil for cooking
Instructions:
- In a large mixing bowl, combine the flour, oats, sugar, baking powder, baking soda, and salt.
- In a separate mixing bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this will result in tough pancakes.
- Heat a skillet or griddle over medium heat. Melt a small amount of butter or oil in the skillet.
- Using a ladle or measuring cup, pour the batter onto the skillet or griddle. Cook the pancakes until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
- Repeat with the remaining batter, adding more butter or oil as needed.
- Serve the oatmeal pancakes warm with your favorite toppings such as maple syrup, butter, or fresh fruit.
