Oven Roasted Sweet Potatoes Haiku: “Yay, no marshmallows! Savory sweet potatoes, glad that I found you!” Super easy recipe and delicious; I left mine in longer, stirring frequently enough that the sweet potatoes browned evenly, but my onions were a little burnt and shrivel-y, which is my bad b/c I didn’t cut them into wedges, as directed. I did follow the recipe, other than apparently being a little too dainty w/ my onion cuts. Wow, these were terrific, and how nice that they weren’t bathed in brown sugar or some other sticky sweetness. I squashed some of the leftovers (sans onions) for the baby, and she said “gurgle blurgle /smile” as she devoured hers too.

– 3 Sweet potatoes, peeled and cubed
– 2 tsp olive oil
– 1 tbsp butter
– 1 tbsp brown sugar (adjust for desired sweetness)
– 1 tsp ground cinnamon
– 1/4 tsp ground nutmeg
– Pinch of ground ginger
– Sea salt, to taste

Directions:

1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a small baking dish with cooking spray.
2. Peel the sweet potatoes and cut them into bite-sized cubes. Place them in the baking dish.
3. In a microwave-safe bowl, melt the butter. Pour the melted butter over the sweet potatoes, along with the olive oil, brown sugar, cinnamon, nutmeg, ginger, and salt. Adjust the amount of sugar or cinnamon to your liking. Toss the sweet potatoes gently to coat them evenly.
4. Bake in the oven for 60 minutes, stirring the sweet potatoes once or twice during roasting to ensure even browning.
5. Once cooked, savor these delightful oven-roasted sweet potatoes. Enjoy!
