What is one of the signs of good conditioning? salsa of course!
Or should I use the plural and say “salsa”? Who wouldn’t love having a variety of sauces to choose from, whether in a taco truck or a full-fledged restaurant? There is often salsa verde Tomatillo, red pepper salsa and my favorite, a fresh tomato salsa also known as pico de gallo or salsa fresca.
Fresh tomato sauce is ideally made with firm, fleshy tomatoes. You can, of course, make salsa with any type of tomato, but firm varieties like roma or greenhouse tomatoes are best.
When using fresh chilli, always taste before adding! Some peppers are hotter than others and you can’t tell unless you taste them. Just take a little bitty bait. You will be able to measure the heat of the peppers and will be better able to judge how much you need.

°3 large tomatoes, quartered
°1 red onion, peeled and cut into wedges
°3 tbsp. chopped garlic
°¼ C. chopped cilantro
°3 peeled jalapeno peppers
°3 tbsp. Lemonade
°2 tbsp. cumin
°1 C. salt
°15 oz. Tomatoes can be crushed
°1 small green bell pepper, diced
*Directions
Place the tomatoes, red onion, cilantro, and jalapeno peppers in a blender or food processor and blend until the mixture is somewhat smooth.
Add minced garlic, lemon juice, cumin, salt, crushed tomato and green pepper.
Blend the mixture until it becomes the desired consistency and serve.
