With a rich and intense chocolate taste, black forest is the perfect cake for your birthdays, desserts, or any other events. I invite you to try it to please your children!

Ingredients :
Genoese :
125 g of sugar
90 g of flour
40 g of cocoa
4 eggs
1 dash of cinnamon
Syrup to soak
4 tbsp cherry syrup
50 g of sugar
100 g of water
Kirsch
Chocolate mousse :
3 eggs
100 g of chocolate
30g butter
1 tbsp of icing sugar
Mascarpone whipped cream:
200 g of 30% liquid cream
200 g of mascarpone
50 g of icing sugar
1/2 vanilla pod
Finishes
1 jar of 400 g of amarena cherries
70 g of dark chocolate
1 tbsp of oil
Preparation :

The day before, prepare the chocolate mousse and the sponge cake.
Once stale, it will not crumble.
Genoese :
Put the whole eggs and the sugar in a bowl in a bain-marie over low heat and whisk until 50°.
Remove from heat and continue whisking until completely cooled (almost 10 min).
Very delicately incorporate the sifted flour, cocoa and cinnamon with a spatula.
Pour into a buttered and floured 18 cm mold (do not use a ring, it may leak).
Bake in a preheated oven at 180° for just 20 minutes. Unmold and cool on a rack.
The same day, cook the syrup to soak: bring the cherry syrup to the boil with the sugar then pour in a good quantity of Kirsch, leave to cool.
Whip the mascarpone cream using Chantilly.
Assembly :

Cut the cake into 3 regular discs.
Completely soak the first pastry with syrup, using a brush.
Top with chocolate mousse.
Cover with the second pastry, soak it well as well then top with the mascarpone cream.
Insert cherries.
Cover with the last pastry and proceed in the same way, soaking it thoroughly.
Place the expandable circle and adapt it to the size of the cake.
Press everything together well.
Reserve in the freezer for 2 hours.
Making the chips:
Gently melt the chocolate in a bowl in the microwave.
Add the oil and spread a strip of chocolate on the cold work surface (in summer, cool it with a bag of ice cubes).
When it is hard, scrape it while holding the blade of a large knife on both sides.
You have to press hard while pulling towards you.
Uncircle, mask the cake with whipped cream.
Decorate the cake with the shavings, rosettes of Chantilly and mousse, and a few cherries.
