Ingredients

1 pound small navy pea beans

1 large smoked hamhock

1 pound good quality smoked sausage

Bay leaf

Onion

Celery

Garlic

Green bell pepper

Creole seasoning blend

Salt/pepper

Directions

Rinse a one pound package of beans and put them in a large heavy pot with about 8 cups water and a smoked ham hock. Sautee  sausage, onion, celery, peppers and garlic in a hot pan then add to the pot along with a bay leaf, creole seasoning blend (and whatever spices you like) cook on med high uncovered and bring to a boil (about 30 min) then reduce heat to med, cover the pot and cook for another 2 1/2 hours, stirring occasionally. In the last 15 to 20 minutes of cook time, slightly mash a spoon or two of the beans against the inside of the pot and stir, it helps in making them creamy.
